Harvesting is starting!

The herbs are growing so well that it is hard to keep up! We have been cutting, washing, drying and crushing as fast as possible. I have a container full of cilantro, several bags of catnip and still working on basil. The oregano plant is still growing but is still too small to harvest anything yet, but the basil is amazing, either as pesto or dried!

Last week we harvested the peas and it was our best attempt yet. All of the plants produced 4 to 6 pods, each with 6-10 peas per pod. It was a lot of work to pick, shell, wash, blanch, bag and freeze – but we have enough for 6 to 8 meals for the two of us. The plan is that we will plant a second harvest by mid August so that we can harvest again by mid October.
